Passover Chocolate Chip Cookies Recipe (taken from iloveindia.com):
- 2 tbs Vanila sugar
- 1 cup Butter/Margarine (unsalted)
- 2 eggs
- 1/2 tsp Salt
- 2 cups Chocolate Chips
- 1 cup Potato Starch
Instuctions:
- Along with butter, white sugar, cream brown sugar, vabilla sugar.
- Mixture the blend eggs
- Stir in matzo meal, salt, potato, cake meal and chocolate
- For an hour or overnight chill the dough.
- To a temperature of 350 F, preheat the oven.
- Line a couple of baking sheets using parchment paper
- On the sheet, scoop large tablespoons of dough. Leave some room for the dough to spread. Use a generous teaspoon of dough for smaller cookies.
- For 15 minutes, bake the cookies or until they are done.
- Let them sit on the baking sheet to cool and shape up.
- Remove the cookies with a metal spatula and chill them before serving.

Scrambled Eggs with Vegetables
Ingredients:
- 1 Tbsp. butter
- 1/2 cup chopped zucchini
- 1/2 cup chopped onion
- 1/2 cup chopped yellow squash
- 6 large eggs
- 1 small red pepper
- 1/2 tsp. kosher salt
- 1/2 cup shredded cheddar cheese
- 1/2 tsp black pepper
How to
1. Heat a large skillet over medium heat. Add butter
2. Once butter is melted, add onion, and cook 3 to 5 minutes until softened.
3. Add zucchini, yellow squash and red pepper. Cook another 5 minutes or until vegetables are soft.
4. Beat eggs in a medium mixing bowl. Pour eggs into skillet. Allow eggs to cook a minute, then stir gently with a whisk.
5. Spinkle cheese over eggs. Cook another minute until cheese is just melted and eggs are set.
6. Season with kisher salt and pepper. Remove from heat and serve immediately.
